Chard, Carrot & Celery Soup
3 tbsp butter
1/2 onion, chopped
1 bunch of Swiss chard (leaves separated from stalks)
3-4 carrots, cut into coins or on the bias 1/4" thick
3-4 ribs celery, cut on the bias 1/2" thick
water, enough to cover the vegetables
fresh parsley, minced
1/4 cup cream (optional)
salt and freshly ground black pepper
In heavy-bottomed stock pot, melt butter over medium heat and add onion, chard stems, carrots and celery. Saute until vegetables have relaxed a bit and are tender. Add water, enough to cover the vegetables, and simmer until broth takes on a beautiful pink color and vegetables are tender. Add chard leaves and simmer 10-12 minutes. Add cream if you prefer. Adjust seasoning to taste. Serve.
