peanut butter cookies

I so wanted a fresh-baked cookie. But I was out of butter and didn't feel like trudging through the snow and 12 degree temperatures to the store. Thank goodness for the internet and the beautiful and inspiring 101 Cookbooks where I found this recipe for peanut butter cookies made with olive oil instead of butter. This recipe also calls for maple syrup instead of sugar. Handy for me since I live in maple syrup country and always seem to have an abundance of it in my kitchen.

I've heard of baking with olive oil but mostly in recipes for crackers, bread or pizza dough. So, I had to try them. Fresh out of the oven, they need a little extra time to set up but they are absolutely delicious fresh-baked and even a few days later. They seem to retain a level of freshness that cookies made with butter do not.

I think I might need to whip up another batch today.
